Ingredients
  

  • 2 large organic eggs
  • 1 cup full-fat milk whole milk
  • 1/2 teaspoon vanilla extract
  • 3/4 cup sifted plain flour all-purpose flour
  • 1 teaspoon sugar
  • A tiny pinch of fine sea salt
  • 1/2 tablespoon unsalted butter

Method
 

Step 1: Whisk the Ingredients Together
  1. In a mixing bowl, combine the eggs, milk, vanilla extract, flour, sugar, and salt. Whisk until the mixture is smooth. You might want to let it rest for a few minutes; this will allow the flour to absorb the liquid fully, leading to smooth pancakes.
Step 2: Preheat the Pan
  1. While the batter rests, place a non-stick frying pan over medium heat. Once it's warm, add the butter. Let it melt completely, then swirl it around to coat the bottom of the pan.
Step 3: Cooking the Pancakes
  1. Using a ladle, pour some of the batter into the pan, forming a circle. Cook for about 1-2 minutes, or until the edges look set and bubbles begin to form on the surface. Carefully flip the pancake using a spatula and cook the other side for another minute until golden brown.
Step 4: Keep Pancakes Warm
  1. Transfer the cooked pancake to a plate. You can keep them warm in a low oven while you repeat the process with the remaining batter.
