Let me introduce you to one of my all-time favorite meals: the chicken burrito. It’s simple yet versatile. This flavorful delight wraps juicy chicken, savory beans, and fresh veggies in a soft tortilla.

Ingredients
  

  • Here’s what you’ll need to throw together a top-notch burrito:
  • - 5 tortillas flour, approximately 20cm/8" wide
- Burrito Seasoning:
  • - 1 tsp onion powder
  • - 1 tsp dried oregano
  • - 2 tsp dried cumin powder
  • - 2 tsp paprika
  • - 1/4 tsp black pepper
  • - 3/4 tsp cayenne pepper optional, adjust based on your preference
- Chicken Filling:
  • - 600g/1.2 lb chicken breast, sliced in half horizontally
  • - 2 tbsp olive oil, divided
  • - 1/2 onion, chopped finely
  • - 2 garlic cloves, minced
  • - 1 red bell pepper, diced
  • - 400g/14oz canned refried beans
  • - 1/4 cup water
  • - Rice Options : choose one
  • - 2.5 cups plain white rice cooked
  • - 2.5 cups Mexican red rice ideal for burritos
- Other Stuffings:
  • - 400g/14oz canned corn, drained or 280g/9oz frozen and thawed
  • - 1.5 cups shredded cheese Mexican blend, cheddar, Monterey Jack
  • - 1/4 cup finely chopped cilantro/coriander
- New Ingredient: 1 avocado, diced (adds creaminess)
- New Ingredient: 1 tbsp lime juice (for zestiness)
  • - Sauce for dunking : choose one
  • - Avocado sauce
  • - Sour cream
  • - Restaurant-style salsa

Method
 

Step 1: Prepare the Seasoning
  1. Start by combining your burrito seasoning ingredients in a small bowl. Stir them well to make sure you have an even distribution of flavors. Coat the chicken breast with 1 tablespoon of olive oil, then sprinkle your spice mix over the chicken pieces. Toss them around until the chicken is nicely coated in that flavorful seasoning.
Step 2: Cook the Chicken
  1. Heat a large skillet over high heat and add the remaining tablespoon of olive oil. Once the oil is shimmering, add the chicken to the pan. Cook for about 2 minutes on one side until it's slightly browned, then flip it over and cook for another 1.5 minutes. Remove the chicken from the skillet and let it rest for about 2 minutes before chopping it into bite-sized pieces. This resting period helps the juices redistribute.
Step 3: Sauté the Vegetables
  1. In the same skillet, add the chopped onion and minced garlic. Sauté them for 1 minute or until fragrant. Then toss in the diced red bell pepper and cook for an additional 2 minutes, or until the onion becomes translucent. This will bring out the sweetness of the veggies and provide a lovely base for the filling.
Step 4: Finish the Filling
  1. Lower the heat and add the refried beans, chopped chicken, and 1/4 cup of water to the skillet. Stir to combine all the ingredients and cook for about 2 minutes, allowing them to mingle. Keep an eye on the mixture—it should be thick and juicy without being watery or dry. Let it cool for about 5 minutes. Trust me, this not only thickens the mixture but enhances the overall taste.
Step 5: Assemble the Burritos
  1. While your filling cools, gently warm the tortillas in the microwave for about 20 seconds; this step makes them pliable. Lay each tortilla on a flat surface. Start by placing a generous scoop of rice on the lower third of the tortilla, followed by your chicken filling, a sprinkle of corn, cheese, and cilantro. Fold up the sides and roll it tightly like a burrito.
Step 6: Toasting the Burritos
  1. You have two options here for crisping up the burritos. For a quick method, pan-fry them in the skillet over medium-high heat without oil for 2 minutes on each side until slightly crispy and the cheese has melted. Alternatively, you can wrap the burritos tightly in foil and bake them in the oven at 180°C/350°F for about 10 minutes. Either way, you’ll end up with a delightful crunch that adds to the experience!
Step 7: Serve and Enjoy
  1. Dunk those delicious burritos in your choice of sauce! Whether it’s creamy avocado sauce, tangy salsa, or a dollop of sour cream, it’ll all hit the spot. Feel free to add a dash of hot sauce too if you’re feeling adventurous.

Notes

- Prep Ingredients Ahead: Slice and dice your vegetables and chicken the night before to save time during meal prep.
- Use Frozen Veggies: If you’re in a hurry, frozen bell peppers or corn work just as well and can be easily thrown into the skillet.
- Experiment with Fillings: Don’t hesitate to swap out the beans for black beans or add in some fresh spinach for extra nutrition.
- Make It Ahead of Time: You can easily compile the burritos and store them in foil or zip-lock bags in the fridge for up to 2 days. Just heat them before serving.
- Freezer Friendly: These burritos freeze beautifully! Wrap tightly in foil and then freeze for up to 3 months. Just thaw overnight in the fridge before reheating.
