Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • ½ medium yellow onion, roughly chopped
  • 2 cloves fresh garlic, smashed
  • 1 medium ripe tomato, thinly sliced
  • ½ teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • 1 teaspoon freshly cracked black pepper
  • 2 teaspoons kosher salt
  • 16 corn tortillas soft and pliable to roll easily
  • Toothpicks to hold everything together while frying
  • Vegetable oil for frying
  • Sliced ripe avocado for serving
  • Mexican crema or sour cream for a cool finish
  • Shredded crisp lettuce for crunch

Method

Step 1: Prepare the Chicken Filling
  1. Begin by cooking the chicken. In a large pot, place the boneless, skinless chicken thighs or breasts. Add water until covered. Toss in the chopped onion, smashed garlic, oregano, cumin, smoked paprika, black pepper, and kosher salt. Bring this mixture to a gentle boil, then lower the heat, cover, and let it simmer. Allow this to cook for about 25-30 minutes or until the chicken is fully cooked and tender.
Step 2: Shred the Chicken
  1. Once the chicken is cooked, take it out of the pot and allow it to cool for a moment. Using two forks, shred the chicken into bite-sized pieces. This step is crucial as it allows the seasoning to blend beautifully with the chicken. It should be tender and juicy.
Step 3: Mix in Additional Ingredients
  1. Add the thinly sliced tomato to the shredded chicken. This adds a refreshing burst of flavor and moisture. Set aside as you prepare your tortillas.
Step 4: Soften the Tortillas
  1. Heat a non-stick skillet or a comal over medium heat. Slightly warm each tortilla, one at a time, for about 25 seconds on each side until pliable. This step is necessary; a cold tortilla will crack when you try to roll it.
Step 5: Roll the Flautas
  1. Take a tortilla, place about 2-3 tablespoons of the chicken filling in the center. Roll it tightly, and secure it in place with a toothpick. Repeat until you've rolled all the tortillas.
Step 6: Fry the Flautas
  1. In a deep frying pan, heat vegetable oil to about 350°F (175°C). Carefully place the flautas seam-side down in the hot oil. Fry until golden brown and crispy, about 4-5 minutes per side. Drain them on a plate lined with paper towels to remove excess oil.
Step 7: Serve with Toppings
  1. After frying, remove the toothpicks. Serve the hot flautas with sliced avocados, Mexican crema or sour cream, and a handful of shredded lettuce. A squeeze of lime juice over the top will add a delightful zing.

Notes

Here are some tips to ensure your flautas turn out great every time:
  • Use Quality Ingredients: Fresh chicken and spices can dramatically improve flavor. Invest in good quality, organic ingredients when possible.
  • Don’t Overfill: Too much filling can make rolling tough and lead to spillage during frying. Stick to 2-3 tablespoons per tortilla.
  • Adjust Heat Carefully: Keep an eye on oil temperature. If it's too hot, flautas will burn on the outside and remain cold inside. If it’s too cool, they'll absorb too much oil.
  • Warm Tortillas First: This is key! Warming them prevents tearing and keeps them flexible for rolling.
  • Experiment with Fillings: Chicken is classic, but consider adding black beans or cheese for a twist.
