  • 1 tablespoon honey
  • 1/2 teaspoon grated ginger
  • 2 cups diced ripe mango
  • 3/4 cup caster sugar
  • 1 teaspoon freshly squeezed lime juice

Step 1: Prepare the Mangoes
  1. Begin by washing and peeling the mangoes. Slice them around the pit and dice the flesh into small pieces. The more uniform the pieces, the better the consistency of your jam.
Step 2: Cook the Mangoes
  1. In a medium-sized pot, combine your diced mangoes, caster sugar, honey, ginger, and lime juice.
    Stir the mixture well, ensuring all ingredients are evenly distributed. Heat it over medium heat, bringing it to a gentle boil.
Step 3: Simmer
  1. Lower the heat and let it simmer. Keep stirring occasionally to prevent sticking. Allow the mixture to cook for about 15-20 minutes, or until it thickens to your desired consistency.
    If you want a smoother jam, feel free to mash the mangoes gently with a fork.
Step 4: Check the Consistency
  1. To check if it’s ready, place a small spoonful on a plate and let it cool for a minute. Run your finger through the middle; if it holds its shape, you’re good to go. If you want a thicker jam, let it simmer for a few more minutes.
Step 5: Jar It Up
