For the Egg Sandwich:

For the Cranberry Chicken Sandwich:
  • 6 slices soft potato bread
  • 3 boneless chicken breasts, cooked and shredded
  • 3 tablespoons olive oil
  • 1/4 teaspoon ¼ teaspoon dried thyme
  • 1 tablespoon mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 oz dried cranberries, chopped
  • 1 sprig fresh watercress
  • 1 tablespoon chopped pecans adds crunch and richness

Method

Step 1: Preparation
  1. Start by gathering all ingredients. Ensure you have soft bread available; typically, white or whole grain works best.
Step 2: Cucumber Dill Sandwich Assembly
  1. Spread softened cream cheese generously on one side of each slice of bread. Layer thin cucumber slices evenly atop the cream cheese. Sprinkle with fresh dill, zest of lemon, and sea salt. Place another slice of bread on top to form a sandwich. Trim the crusts using a sharp knife. Cut into triangles or fingers based on your preference.
Step 3: Smoked Salmon Sandwich Creation
  1. On pumpernickel bread, spread softened cream cheese. Lay the smoked salmon evenly over the cream cheese. Add the cucumber slices, capers, and dill. Top with another slice of pumpernickel. Trim crusts and cut sandwiches into desired shapes.
Step 4: Egg Sandwich Making
  1. Mash the boiled eggs into a bowl. Mix in the butter, mayonnaise, Dijon mustard, and paprika.
Spread the mixture onto a slice of potato bread.
Layer with another slice of bread, trim the crusts, and slice into pieces.
Step 5: Cranberry Chicken Sandwich Preparation
  1. In a bowl, mix shredded chicken with olive oil, thyme, mayonnaise, Dijon mustard, and dried cranberries.
Spread the mixture on potato bread.
Add fresh watercress and top with another slice of bread.
Cut off the crusts and slice into elegant pieces.

Notes

  • Bread Quality: Choose fresh, soft bread. Day-old bread can be tough and won’t give that delicate bite.
  • Even Thickness: Aim for uniform size and thickness in spreads and fillings. This promotes a cleaner appearance and easier handling.
  • Spread Wisely: Do not over-saturate the bread. Spreads should be moist but not runny, or else the sandwiches can become soggy.
  • Chill the Fillings: Keeping your fillings cold will enhance flavors. A cold sandwich can be a wonderful surprise.
  • Presentation Matters: Aesthetics are crucial. Utilize tiered serving platters for an elegant display. Garnish with herbs or edible flowers for that extra touch.
