Ingredients

  • 1 head of crisp iceberg lettuce
  • 1 medium red onion, thinly sliced
  • 1 ripe tomato, sliced
  • 2 crusty Italian rolls
  • 1 cup Provolone cheese, thinly sliced
  • 3/4 cup smoked ham, thinly sliced
  • 4 oz Genoa salami, thinly sliced
  • 4 oz capocollo, thinly sliced
  • 4 oz prosciutto, thinly sliced
  • 3/4 cup pepperoni, sliced
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes
  • as needed kosher salt

Method

Step 1: Prepare the Ingredients
  1. Start by washing the produce. Rinse the iceberg lettuce until it's clean. Don’t skimp on this. A good wash makes all the difference! For the tomatoes, just slice them into nice, even rounds. For the onion, keep those slices thin; nobody likes a chunky bite of red onion!
Step 2: Assemble the Base
  1. Grab those crusty Italian rolls. Slice them open. A little trick? Try to toast them slightly. Just a minute under the broiler will do. Toasting helps them hold up against the moisture from the fillings.
Step 3: Layer the Ingredients
  1. Now comes the fun part. Begin layering your sub. Start with a generous bed of lettuce. Then add the tomatoes, followed by that stunning red onion.
  2. Remember, next you should lay down the Provolone cheese. Follow it with the meats, stacking them artfully. Create your own culinary masterpiece!
Step 4: Drizzle the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, oregano, crushed red pepper, and a pinch of salt. Drizzle this beautiful mix over the meat and veggies. This step really brings everything to life.
Step 5: Final Touches
  1. Cap things off with the top of the roll. You can press it down gently to meld all those flavors.

Notes

  • Use fresh ingredients. Fresh vegetables and high-quality meats make all the difference.
  • Customize to taste. Adjust the amount of spice or veggies according to personal preference.
  • Don’t overstuff. While it’s tempting, a manageable sandwich is easier to enjoy.
  • Let it sit briefly. Allowing the sandwich to rest for a few minutes before diving in helps the flavors meld beautifully.
  • Eat it fresh. Italian subs taste best when made fresh, but storing leftovers is simple.
