Ingredients

For the Salad:
  • 1/4 cup sliced pepperoncini or banana peppers, finely chopped
  • 4 slices deli turkey, diced 3 oz
  • 1 medium 1 tomato or 10-12 cherry tomatoes, diced
  • 4 slices deli salami, chopped into small pieces 2 oz
  • 1/2 medium sweet yellow or red onion, diced or sliced
  • 4 slices provolone cheese, diced 3 oz
  • 1 small head of crisp iceberg lettuce, outer leaves and core discarded, finely chopped or chopped romaine hearts 3-4 cups
  • 1-2 small soft Italian rolls diced like a bolillo roll
  • 1/2 cup chopped cucumber for freshness
  • 1/4 cup pitted black olives, sliced for added flavor
For the Dressing:
  • 3 tablespoons premium extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper

Method

Step 1: Prepare Your Ingredients
  1. Start by gathering all your ingredients. Wash and chop your veggies: slice the cucumbers, dice the tomatoes, and finely chop the lettuce. Get everything ready to go.
Step 2: Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Taste and adjust as needed. If you like it tangier, a little more vinegar wouldn’t hurt.
Step 3: Assemble the Dish
  1. In a large bowl, layer the turkey, salami, provolone cheese, and veggies. Add the chopped lettuce and top it off with the black olives and pepperoncini. If you’re adding the Italian roll pieces, integrate them at this stage.
Step 4: Pour the Dressing
  1. Drizzle your freshly made dressing over the entire mixture. Don't just dump it all at once; instead, drizzle evenly to ensure every bite is packed with flavor.
Step 5: Toss and Coat
  1. With clean hands or a large spoon, gently toss everything together until all the ingredients are well-coated in the dressing.
Step 6: Serve or Store
  1. You can serve it immediately, or let it sit in the fridge for about 30 minutes. This waiting time allows the flavors to meld beautifully.

Notes

  • Chill for Flavor: Refrigerating the dish for a bit enhances the flavors. Letting it marinate is beneficial.
  • Quality Ingredients Matter: Choose high-quality meats and cheeses for the best flavor. It’s worth the extra effort.
  • Slice with Care: Cutting your veggies into even sizes ensures a balanced bite with every scoop.
  • Load it Up: Don't be shy! Add more veggies or proteins based on your preference.
  • Dress Accordingly: If you’re a dressing fanatic, don’t hesitate to double the recipe. Just keep it fresh.
