I had this vivid image of vibrant market stalls overflowing with fresh ingredients. After a little research, I stumbled upon a dish that seemed to encapsulate the warmth and flavors of Turkish cuisine—Lahmacun.

  • 1/2 lb raw organic store-bought pizza dough
Topping
  • 7 oz ground lamb or beef
  • 4 tbsp concentrated tomato paste
  • 2 tbsp Private Reserve Greek extra virgin olive oil
  • 1/2 sweet red bell pepper, cored and cut into chunks
  • 1 small shallot, halved
  • 2 cloves garlic, peeled
  • 1/2 oz fresh flat-leaf parsley with tender stems
  • 1 tsp smoked sweet paprika
  • 1 tsp ground allspice
  • 1/2 tsp ground cumin seeds
  • 1/2 tsp Aleppo chili flakes
  • 1/2 tsp ground cinnamon
  • 1/2 tsp cayenne powder
  • 1/2 tsp fine sea salt
  • 1 tsp dried oregano
  • Lemon wedges for serving

Step 1: Prepare the Dough
  1. First, take your pizza dough out and let it reach room temperature. This makes it easier to roll out.
  2. Dust your working surface with flour and roll the dough into a thin circle, about 12 inches in diameter. You want it as thin as possible without tearing; this is key to that lovely crispiness.
Step 2: Make the Topping Mixture
  1. Now for the fun part! In a food processor, toss in your ground meat, bell pepper, shallot, garlic, and parsley.
  2. Add the tomato paste and all the spices—smoked paprika, allspice, cumin, chili flakes, cinnamon, cayenne, sea salt, and oregano. Pulse it a few times until it’s nicely combined but still has some texture. You’ll get a fragrant mix that makes your taste buds tingle with anticipation!
