Ingredients
  

For the Dough:
  • 1 teaspoon instant yeast fast-acting yeast
  • ½ cup warm milk
  • 2 tablespoons light brown sugar
  • 2 tablespoons unsalted butter, softened
  • cups all-purpose flour plain flour
  • ½ teaspoon ground cardamom
  • teaspoon salt
For the Filling:
  • 3 tablespoons light brown sugar
  • 3 tablespoons unsalted butter, softened
  • 1 teaspoon ground cardamom
  • ½ teaspoon cinnamon optional, for a warm, spiced twist
To Top:
  • 1 teaspoon cane sugar or pearl sugar, if available
  • 1 egg for egg wash you won’t use all of it
  • ½ teaspoon vanilla sugar optional, for a hint of sweetness

Method
 

Step 1: Prepare the Dough
  1. Let's kick things off. In a small bowl, combine the warm milk and yeast, allowing it to sit until it becomes frothy—about 5 to 10 minutes. This simple act brings yeast to life, making it essential for a fluffy bun.
  2. In a large bowl, mix flour, cardamom, brown sugar, and salt. Create a well in the center. Add the yeast-milk mixture and softened butter. Mix until a rough dough forms.
Step 2: Kneading the Dough
  1. Time to get physical! Lightly flour a clean surface and turn your dough out. Knead for about 8 to 10 minutes until smooth. You want a dough that springs back when pressed—a classic sign that you’ve done well. It should be pliable, soft, and just slightly sticky.
Step 3: First Rise
